Να καθησυχάσουν και να ενημερώσουν τους πολίτες σε όλο τον κόσμο, σχετικά με τα αίτια της εμφάνισης της νέας γρίπης, προσπαθούν οι ειδικοί. Επισημαίνουν την ανάγκη τήρησης των μέτρων ατομικής υγιεινής καθώς και της έγκαιρης ενημέρωσης των αρχών ή γιατρού σε περίπτωση που κάποιος πολίτης παρουσιάζει συμπτώματα δυνατού κρυολογήματος ή γρίπης σε συνδυασμό με πυρετό.
Το βασικό ερώτημα είναι κατά πόσον ο ιός που προκαλεί τη συγκεκριμένη ασθένεια, έχει τη δυνατότητα να αποτελέσει την απειλή που εδώ και χρόνια φοβάται ο Παγκόσμιος Οργανισμός Υγείας. Ακολουθούν μια σειρά από ερωτήσεις και απαντήσεις, με βάση τις μέχρι τώρα επιστημονικές γνώσεις για το νέο ιό, με βάση δημοσιεύματα του BBC, του New Scientist και του Live Science.
Τι είναι η γρίπη των χοίρων;
Μια αναπνευστική ασθένεια που πλήττει τα γουρούνια και προκαλείται από γρίπη τύπου Α. Είναι γνωστή από παλιά, περιοριζόταν στα κοπάδια των χοίρων και σπάνια ήταν θανατηφόρα. Συνήθως ξεσπά το φθινόπωρο και το χειμώνα, αλλά είναι παρούσα όλο τον χρόνο. Υπάρχουν πολλές διαφορετικές μορφές της γρίπης των χοίρων και, όπως συμβαίνει με την ανθρώπινη γρίπη, ο τύπος της μόλυνσης συνεχώς μεταβάλλεται.
Μπορούν να την κολλήσουν οι άνθρωποι;
Κανονικά όχι, αν και σποραδικά αυτό είχε συμβεί, συνήθως σε όσους είχαν στενή επαφή με χοίρους. Η γρίπη αυτή κολλά όπως η ανθρώπινη γρίπη, με το βήχα και το φτάρνισμα, μέσα από αερομεταφερόμενα υγρά σταγονίδια. Στο ξέσπασμα που τώρα βρίσκεται σε εξέλιξη, είναι ξεκάθαρο ότι η νέα γρίπη περνά από άνθρωπο σε άνθρωπο. Τα συμπτώματα δεν διαφέρουν από την κοινή εποχική γρίπη (πυρετός, πόνος στο σώμα και το λαιμό, κόπωση, βήχας κλπ.). Ένας ενήλικος μπορεί να εξαπλώσει τον ιό μια μέρα πριν και μέχρι επτά μέρες μετά την εκδήλωση των συμπτωμάτων, ενώ τα παιδιά πιθανώς για ακόμη περισσότερο χρόνο.
Ποιες είναι οι κατάλληλες προφυλάξεις;
Συχνό πλύσιμο χεριών με σαπούνι, αποφυγή επαφής των χεριών με τη μύτη και το στόμα, αποστάσεις ασφαλείας από αρρώστους, μάσκα προσώπου κλπ.
Πρόκειται για ένα νέο άγνωστο είδος γρίπης;
Ο Παγκόσμιος Οργανισμός Υγείας έχει επιβεβαιώσει ότι, τουλάχιστον σε μερικές περιπτώσεις, έχει διαπιστωθεί η ύπαρξη ενός άγνωστου μέχρι τώρα στελέχους Η1Ν1 της γρίπης τύπου Α. Το Η1Ν1 προκαλεί τα περιοδικά ξεσπάσματα της συνηθισμένης γρίπης στους ανθρώπους. Το νέο στέλεχος Η1Ν1 είναι διαφορετικό επειδή περιέχει ανάμικτο γενετικό υλικό, το οποίο βρίσκεται στα στελέχη του ιού που μολύνουν ανθρώπους, πουλιά και χοίρους. Οι ιοί γρίπης έχουν την ικανότητα να ανταλλάσσουν γενετικό υλικό και οι επιστήμονες εκτιμούν ότι η νέα εκδοχή του Η1Ν1 προέκυψε, κάποια στιγμή, από την ανάμιξη διαφορετικών στελεχών του ιού (τα οποία συνήθως μολύνουν διαφορετικά είδη έμβιων οργανισμών), μέσα στον ίδιο χοίρο, που αποτέλεσε το ‘εργαστήρι’ για τη γενετική ανταλλαγή και τη δημιουργία του νέου στελέχους. Στην πραγματικότητα, ο νέος ιός δεν έχει ποτέ ανιχνευτεί αυτούσιος σε χοίρους στο παρελθόν, απλώς μια από τις πρωτεϊνες του είναι όμοια με τον ιό που συνήθως μολύνει τους χοίρους.
Είναι ασφαλής η κατανάλωση χοιρινού κρέατος;
Δεν υπάρχει απόδειξη ότι η γρίπη των χοίρων μεταδίδεται τρώγοντας χοιρινό από μολυσμένα ζώα. Όμως είναι απαραίτητο το κρέας να είναι καλά μαγειρεμένο, σε θερμοκρασία τουλάχιστον 70 βαθμών κελσίου, ώστε να σκοτωθεί ο ιός αν υπάρχει.
Πόσο πρέπει να ανησυχούμε;
Κάθε φορά που εμφανίζεται ένα νέο στέλεχος γρίπης (όπως φαίνεται πως συμβαίνει και τώρα), το οποίο έχει αποκτήσει την ικανότητα να ‘πηδά’ από άνθρωπο σε άνθρωπο, παρακολουθείται στενά από τους επιστήμονες και τις αρμόδιες αρχές υγείας μήπως έχει τη δυνατότητα να εξελιχτεί σε επιδημία ή και σε πανδημία. Η πανδημία της ισπανικής γρίπης το 1918 (που προκλήθηκε από μια μετάλλαξη του Η1Ν1) ήταν η πιο φονική της σύγχρονης εποχής, μόλυνε περίπου το 40% του παγκόσμιου πληθυσμού και σκότωσε πάνω από 50 εκατ. ανθρώπους, ιδίως νέους. Το 1957 η Ασιατική γρίπη (μια μετάλλαξη του ιού Η2Ν2 της ανθρώπινης γρίπης, σε συνδυασμό με μια μετάλλαξη της γρίπης των άγριων παπιών) σκότωσε 2 εκατ. άτομα, ιδίως ηλικιωμένους. Το 1968 μια μετάλλαξη γνωστή ως Η3Ν2, που ξεκίνησε από το Χονγκ Κονγκ, σκότωσε 1 εκατ. ανθρώπους παγκοσμίως, ιδίως άνω των 65 ετών.
Για την νέα περίπτωση της γρίπης των χοίρων, ο Παγκόσμιος Οργανισμός Υγείας προειδοποιεί ότι είναι σοβαρή και ότι δυνητικά μπορεί να οδηγήσει σε παγκόσμια πανδημία. Τονίζει όμως ότι είναι ακόμα πολύ νωρίς για να αξιολογηθεί σωστά η εξέλιξη της κατάστασης. Είναι ενθαρρυντικό ότι, αντίθετα με τα φονικά κρούσματα στο Μεξικό, σε άλλες χώρες (ιδίως τις ΗΠΑ που έχουν και τα περισσότερα λόγω γειτνίασης) τα συμπτώματα των ασθενών είναι πιο ήπια, γεγονός που ίσως σημαίνει ότι κάτι ασυνήθιστο συμβαίνει στο Μεξικό. Πιθανώς υπάρχει σε αυτή τη χώρα εν δράσει ένας δεύτερος άσχετος τοπικός ιός, που όμως δεν θα επηρεάσει τον υπόλοιπο κόσμο. Ένδειξη πάντως ότι κάτι ασυνήθιστο συμβαίνει, είναι ότι η νέα γρίπη πλήττει κυρίως νέους (που έχουν λιγότερα αντισώματα) και όχι ηλικιωμένους, όπως η συνήθης περιοδική γρίπη.
Υπάρχει θεραπεία;
Δύο συνήθη αντι-γριπικά φάρμακα φαίνεται να είναι αποτελεσματικά στην αντιμετώπιση των μέχρι τώρα περιστατικών, σύμφωνα με τις αμερικανικές αρχές. Επειδή όμως ο ιός μπορεί να αναπτύξει αντίσταση, κανείς δεν μπορεί να είναι σίγουρος για πόσο καιρό τα φάρμακα αυτά θα είναι αποτελεσματικά. Είναι εξάλλου ακόμα αβέβαιο κατά πόσο μπορεί να είναι αποτελεσματικά τα αντι-γριπικά εμβόλια κατά του νέου στελέχους, το οποίο είναι γενετικά διαφορετικό από άλλα στελέχη γρίπης. Από την άλλη, δεν υπάρχουν αποθέματα εμβολίων για το νέο ιό. Αμερικανοί επιστήμονες ήδη ετοιμάζουν ένα νέο εμβόλιο, όμως θα πάρει χρόνο για να τελειοποιηθεί και για να παραχθεί σε αρκετές ποσότητες από τις φαρμακευτικές εταιρίες, ώστε να καλύψει την τεράστια παγκόσμια ζήτηση – αν χρειαστεί. Αν πάντως ο ιός εμφανίσει διαδοχικά κύματα έξαρσης και υποχώρησης, όπως σε προηγούμενες περιπτώσεις, τότε θα υπάρχει περισσότερος χρόνος προετοιμασίας.
Έχει σχέση η νέα γρίπη με το κοινό κρυολόγημα;
Πολύ συχνά δημιουργείται σύγχυση, επειδή τόσο η γρίπη όσο και το κρυολόγημα προκαλούνται από ιούς που φέρνουν παρόμοια συμπτώματα, οπότε είναι σχεδόν αδύνατη η διάκρισή τους με βάση μόνο τα συμπτώματα. Πάντως η γρίπη έχει πιο έντονα συμπτώματα (ιδίως πυρετό και αίσθημα εξάντλησης) και κυρίως μπορεί να οδηγήσει σε σοβαρότερες επιπλοκές.
Μπορεί η νέα γρίπη να φθάσει σε οποιαδήποτε χώρα;
Από τη στιγμή που τα ταξίδια είναι πια τόσο διαδεδομένα, είναι πιθανό ένας φορέας να τη μεταφέρει σε άλλη χώρα. Ο βαθμός επικινδυνότητας εξαρτάται από το τόσα εύκολα ο ιός μεταδίδεται σε άλλο άνθρωπο. Τα συμπτώματα χρειάζεται μερικές μέρες για να εκδηλωθούν και στο μεταξύ ο ιός μπορεί να έχει εξαπλωθεί πριν την εμφάνιση των πρώτων συμπτωμάτων.
Μπορεί τελικά να υπάρξει κάποια στιγμή πανδημία;
Κάθε νέος ιός που μεταδίδεται μεταξύ των ανθρώπων προκαλεί τέτοιο φόβο, επειδή το ανοσοποιητικό σώμα των ανθρώπων δεν έχει κατάλληλα αντισώματα. The specialists are trying to reassure and inform people worldwide regarding the reasons for the appearance of the new flu. They are stressing the need for maintaining personal hygiene measures as well as for promptly informing the authorities or a doctor in the event that someone develops symptoms of a heavy cold or flu together with fever.
The fundamental question is whether the virus that causes this particular disease has the potential to become the threat that the World Health Organisation has feared for years. A series of questions and answers follow, based on the current scientific knowledge of the virus publicised by the BBC, the New Scientist and Live Science.
What is swine flu?
It is a respiratory disease that affects pigs and that is caused by type A influenza. It has been known for a long time, and was restricted to individual herds of pigs and was rarely fatal. It normally breaks out in autumn or winter but it is present all year round. There are many different forms of swine flu and the type of infection constantly changes, as indeed happens with human influenza.
Can people catch it?
Not normally, but it has happened from time to time, usually with people that have come into close contact with pigs. This flu is passed in the same way as human flu through coughing and sneezing, in airborne moisture droplets. In an outbreak that is now in progress, it is clear that the new flu is being passed from person to person. The symptoms are no different to those of common seasonal flu (fever, sore throat, bodily aches, fatigue, coughing, etc.) An adult can spread the virus a day before and up to seven days after the appearance of symptoms, while children may do so for longer.
What are the suitable precautions?
Frequent hand washing with soap, avoiding touching the nose and mouth with your hands, keeping a safe distance from the sick, face mask, etc.
Is it a new unknown kind of flu?
The World Health Organisation has confirmed that at least in a few instances a previously unknown H1N1 strain of type A influenza virus has been discovered. The H1N1 strain causes the periodic outbreaks of the type of flu that is usual in humans. The new H1N1 strain is different because it contains mixed genetic material, which is found in the strains of the virus that infect humans, birds and pigs. Flu viruses have the ability to exchange genetic material and scientists believe that, at some point, the new version of H1N1 came about, as a result of the mixing of different strains of the virus (which usually infect different types of living creatures) within the same pig, which became the “laboratory” for genetic exchange and creation of the new strain. The new virus has in fact never before been detected in identical form in pigs; one of its proteins is simply similar to the virus that usually infects pigs.
Is it safe to eat pork?
There is no evidence to prove that swine flu can be transferred by eating the pork of infected animals. However, the meat must be cooked well at a temperature of at least 70 degrees centigrade, in order to kill the virus if it is present.
How much should we worry?
Each time that a new strain of flu appears which has acquired the ability to “jump” from person to person (as it seems is now happening), its progress is followed closely by scientists and the competent health authorities in case it has the ability to develop into an epidemic or pandemic. The Spanish flu pandemic in 1918 (which was caused by a mutation of H1N1) was the most deadly of modern times; it infected about 40% of the world's population and killed over 50 million people, especially the young. In 1957, Asian flu (a mutation of the H2N2 human flu virus combined with a mutation of wild ducks' flu) killed 2 million people, especially the elderly. In 1968, a mutation known as H3N2, which started in Hong Kong, killed 1 million people worldwide, especially those over 65 years old.
In respect of the new instance of swine flu, the World Health Organisation warns that it is serious and has the potential to lead to a worldwide pandemic. It emphasises though that it is still too early to correctly appraise the progress of the situation. It is encouraging that in contrast with the deadly outbreaks in Mexico, in other countries (especially the USA which have the most outbreaks due to population density) the symptoms of the ill are milder, a fact that possibly means something unusual is happening in Mexico. Perhaps, a second unrelated local virus is active in that country, which however will not affect the rest of the world. An indication that something unusual is happening, is that the new flu affects mainly young people (who have less antibodies) and not the old, as the usual periodic flu does.
Is there a cure?
Two common anti-flu medications so far appear to be effective in coping with the occurrences, according to the American authorities. No one can be certain though how long these medications will be effective, because the virus could develop resistance to them. It is also uncertain how long anti-flu vaccines will be effective against the new strain, which is genetically different from other strains of flu. On the other hand, there are no stocks of vaccines for the new virus. American scientists are already preparing a new vaccine, but it will take time to perfect and to be produced in sufficient quantities by the pharmaceutical companies, so as to meet the colossal worldwide demand – if necessary. If the virus demonstrates successive waves of virulence and decline, as has happened in previous instances, then there will be more time to prepare.
Is the new flu related to the common cold?
Confusion frequently arises because both flu and colds are caused by viruses which cause similar symptoms, so it is almost impossible to distinguish them only by their symptoms. In any case, flu has harsher symptoms (in particular fever and a feeling of exhaustion) and mainly can lead to more serious complications.
Can the new flu reach any country?
Since travelling is so widespread, it is possible that a carrier could take it to another country. The degree of danger depends on how easily the virus is passed on to another person. The symptoms need a few days to reveal themselves and in the meantime the virus can spread before the first symptoms appear.
Could there eventually sometime be a pandemic?
Every new virus that is spread between people causes a fear of this sort, because the human immune system does not have suitable antibodies. Most countries have plans on the shelf to deal with such an occurrence, which include medications, vaccines and measures to isolate the carriers, prohibiting public gatherings, closing schools, and other measures.

Μία μονάδα περίπου 200 τμ। μπορεί να δώσει μέχρι 3.200 κοτόπουλα τον χρόνο. Κοτόπουλα ελευθέρας βοσκής και κοκοράκια έρχονται να στηρίξουν το εισόδημά σας.
Η εκτροφή σε μία μεσαία μονάδα παραγωγής (εσωτερικού χώρου και εμβαδού 200 τ.μ.) μπορεί να αυξήσει το ετήσιο σας εισόδημα κατά 7.000 ευρώ, ενώ, αν δραστηριοποιηθείτε στην εκτροφή πουλερικών ελεύθερης βοσκής, το έσοδο μπορεί να είναι σημαντικά υψηλότερο.
Μάλιστα, σήμερα οι μεγάλες πτηνοτροφικές εταιρείες -όπως είναι ΠΙΝΔΟΣ, ΜΙΜΙΚΟΣ, ΑΡΤΑ- «κλείνουν» συμβάσεις με πτηνοπαραγωγούς για να τους προμηθεύουν κοτόπουλα. Στο 1,5 ευρώ διαμορφώνεται η μέση τιμή ανά κιλό για τα κοτόπουλα που εκτρέφονται σε εσωτερικούς χώρους και αυξάνεται για τα κοτόπουλα ελεύθερης βοσκής και τα κοκοράκια.
Μάλιστα, οι εταιρείες αναλαμβάνουν να προμηθεύσουν τους παραγωγούς με τους νεοσσούς αλλά και την τροφή. Ετσι ο παραγωγός θα πρέπει να διαθέτει μόνο τον απαραίτητο στεγασμένο χώρο ή ανοικτή έκταση, ανάλογα με το είδος της εκτροφής που θα επιλέξει.
Τα κοτόπουλα που εκτρέφονται για την παραγωγή κρέατος ονομάζονται κοτόπουλα πάχυνσης και αποτελούν τον μεγαλύτερο αριθμό εκτρεφομένων ζώων στην ΕΕ.
Ας σημειωθεί ότι μία μεσαία μονάδα (περίπου 200 τ.μ.) μπορεί να δώσει μέχρι 3.200 κοτόπουλα τον χρόνο. Σύμφωνα με τις προϋποθέσεις εκτροφής, ανά τετραγωνικό μέτρο αναλογούν 4 πουλιά. Κάθε εκτροφή διαρκεί περίπου 2,5 με 3 μήνες, οπότε μέσα στον χρόνο έχουμε 3 με 4 εκτροφές (ήτοι 200 τ.μ.Χ 4 κοτόπουλα= 800 κοτόπουλα Χ 4 εκτροφές= 3.200 κοτόπουλα).
Μόλις τα κοτόπουλα αποκτήσουν το επιθυμητό βάρος, που σήμερα κυμαίνεται στο 1,5 με 1,8 κιλά, ο παραγωγός τα παραδίδει στην εταιρεία. Στη συνέχεια, προχωρά στην απολύμανση της μονάδας, διαδικασία που διαρκεί συνήθως 20 μέρες, ώστε ο χώρος να είναι καθαρός να υποδεχθεί τον νέο πληθυσμό πουλιών.
Συστήματα εκτροφής
Τα περισσότερα εκτρέφονται σε εσωτερικούς χώρους πτηνοτροφείων, πάνω σε μια στρωμνή από ψιλοκομμένο σανό ή ροκανίδια, η οποία ονομάζεται αχυρόστρωμα.
Εδαφος κερδίζει το τελευταίο διάστημα η εκτροφή ελευθέρας βοσκής.
Αυτοί οι τύποι εκτροφής πρέπει να είναι σύμφωνοι με τους κανονισμούς εμπορίας της ΕΕ και δηλώνονται στις ετικέτες των προϊόντων πτηνοτροφίας.
Έχουμε λοιπόν τα κοτόπουλα πάχυνσης ελεύθερης βοσκής. Δηλαδή, τα πουλερικά έχουν πρόσβαση στο ύπαιθρο καθημερινά και τρέφονται από τη βλάστηση της περιοχής. Υπάρχουν διάφορες διαβαθμίσεις για τα κοτόπουλα ελεύθερης βοσκής, ανάλογα με το πόσες ώρες μένουν καθημερινά στο ύπαιθρο και το είδος τροφής που λαμβάνουν.
Σημειώνεται ακόμα ότι για να φτάσουν τα κοτόπουλα ελεύθερης βοσκής στο επιθυμητό βάρος (2-2,5 κιλά) απαιτείται μεγαλύτερο χρονικό διάστημα (σε σχέση με τα κοτόπουλα που εκτρέφονται συμβατικά).
Η κοκκιδίωση και πώς αντιμετωπίζεται
Προσοχή στην κοκκιδίωση. Είναι μια αρρώστια των κοτόπουλων που προκαλείται από ένα παράσιτο το οποίο μεταφέρεται με τις κουτσουλιές. Η καλή υγιεινή βοηθάει στην πρόληψή του. Αν δείτε αίμα στις κουτσουλιές των κοτόπουλων είναι το πρώτο που πρέπει να ελέγξετε. Τα φάρμακα στην τροφή βοηθούν στην πρόληψη, αλλά αν δεν θέλετε να χρησιμοποιείτε φάρμακα, μπορείτε να σταματήσετε αρκετά γρήγορα την ασθένεια βάζοντας ξύδι στο νερό που πίνουν τα πουλιά – μια κουταλιά της σούπας ξύδι σε κάθε λίτρο νερό για τρεις ημέρες. Και φυσικά καθαρίστε καλά τον χώρο και αλλάξτε το αχυρόστρωμα.
Υγιεινό διαιτολόγιο, φρέσκο νερό και φωτισμός
Εκτός από την τροφή και το νερό, η θερμοκρασία και η ποιότητα του αέρα παίζουν καθοριστικό ρόλο στην ανάπτυξη και την καλή υγεία των κοτόπουλων. Γενικά είναι ανθεκτικά πτηνά, ωστόσο ο πτηνοτρόφος θα πρέπει να προσέχει τα εξής:
Η τροφή πρέπει να βασίζεται σε υγιεινό διαιτολόγιο, το οποίο περιλαμβάνει δημητριακά, όπως σιτάρι και καλαμπόκι, πρόσθετες βιταμίνες και μέταλλα. Απαραίτητη είναι η συνεχής πρόσβαση σε φρέσκο καθαρό νερό.
Η θερμοκρασία (για τις εκτροφές εσωτερικού χώρου) πρέπει να είναι σταθερή για την άνετη διαβίωση των πτηνών. Τα κοτόπουλα είναι ευαίσθητα στις ακραίες θερμοκρασίες, όταν συνδυάζονται με υψηλή υγρασία, και μπορεί να πεθάνουν από υπερθέρμανση.
Ο καλός εξαερισμός του πτηνοτροφείου είναι επίσης βασικός για να αποτραπεί η συγκέντρωση διοξειδίου του άνθρακα, αμμωνίας και σκόνης που παράγονται από τα πτηνά και να αποφευχθούν τα αναπνευστικά προβλήματα στα κοτόπουλα.
Το αχυρόστρωμα πρέπει να είναι στεγνό. Το υγρό αχυρόστρωμα μπορεί να προκαλέσει δερματικά προβλήματα στα κοτόπουλα και επηρεάζει την ποιότητα του αέρα. Ωστόσο, το αχυρόστρωμα δεν πρέπει να είναι υπερβολικά ξηρό, ώστε να αποφευχθούν προβλήματα σκόνης στον ορνιθώνα.

Επίσης τα κοτόπουλα πρέπει να επιθεωρούνται τουλάχιστον δύο φορές την ημέρα για πιθανά προβλήματα.
Translation - English HATCHING AN INCOME WITH CHICKEN FARMING
A farm of approximately 200 m2 can rear up to 3,200 chickens a year. Rearing free range chickens and cockerels can increase your income.
Rearing chickens in an average sized farm (of 200 m internal floor space) can increase your annual income by 7,000 euro, although the income can be significantly higher if one chooses to rear free range poultry.
The big poultry companies such as Pindos, Mimikos and Arta sign contracts with farmers to supply them with chickens. The average price for chickens raised in closed sheds is now settling at one and a half euro per kilo and the price is higher for free range chickens and cockerels.
The companies undertake to supply the farmers with day old chicks and feed. In this way, all the farmer has to do is to provide the necessary shed or open space, depending upon the kind of rearing that he chooses to undertake.
Chickens that are reared for meat are called broiler chickens and comprise the largest number of reared animals in the E.U.
Let it be noted that an average sized farm of (about 200 m2 ) can rear up to 3,200 chickens per year. Normally, four birds are reared per square metre. Each rearing cycle lasts for two and a half to three months, which means that there are three to four crops per year (that is, 200 x four chickens = 800 chickens x four crops = 3,200 chickens).
As soon as the chickens reach their desired weight, which nowadays ranges from one and a half to one point eight kilos, the farmer delivers them to the company. After that, the farmer disinfects the farm, a procedure that usually lasts for 20 days, so that the building or space is clean when the new crop of birds is delivered.
Rearing methods
Most broiler chickens are reared in closed poultry sheds on a layer of finely cut straw or sawdust, which is called litter.
Recently, free range rearing has been gaining ground.
Rearing methods must comply with the EU’s marketing regulations and are stated on the labels of poultry meat products.
We therefore have free range broiler chickens. That is to say that the birds have access to the outside every day and feed on the local vegetation. There are grades of free range chickens, according to how many hours they stay outside each day and the type of feed that they receive.
It should be noted, too, that more time is needed for free range chickens to reach the desired weight of two to two and a half kilos (than for chickens reared by conventional methods).
Coccidiosis and how it is controlled
Beware of coccidiosis. It is a poultry disease that is caused by a parasite carried in droppings. Good hygiene helps to prevent it. The first thing that you should check for is if you see blood in the birds’ droppings. Medications added to the feed assist in its prevention, but if you don’t want to use medications, you can cure the disease reasonably quickly by adding vinegar to the bird’s drinking water – a soupspoon of vinegar for every litre of water for three days. And, naturally, clean the area well and change the litter.
Healthy diet, fresh water and light
Apart from the food and water, the temperature and quality of the air play a decisive role in the development and good health of chickens. Generally speaking, chickens are hardy; however the chicken farmer should pay attention to the following:
The feed must form a healthy diet, which should include cereals, such as wheat and corn, and added vitamins and minerals. It is also necessary for the birds to have continuous access to fresh, clean water.
The temperature (of indoor poultry farms) should be stable and provide for suitably comfortable living conditions. Chickens are sensitive to extreme temperatures and when high temperatures are combined with high humidity, the birds can die from hyperthermia.
Good ventilation is also a basic prerequisite and prevents the accumulation of carbon dioxide, ammonia fumes and dust which the birds produce, and prevents respiratory problems.
The litter must be dry. Moist litter can cause skin problems for the chickens and affects the quality of the air. Nevertheless, the litter shouldn’t be excessively dry, so as to avoid dust problems in the poultry shed.
The chickens must also be able to move around comfortably and should not be overcrowded.
The poultry farm must be well lit, although eight consecutive hours of darkness is necessary to ensure correct development.
Despite being hardy, chickens frighten exceptionally easily and can be hurt or trampled on by others in their effort to hide. For this reason, it is best to avoid noises. Chickens should also be inspected at least twice daily for possible problems.

Στις μονάδες εντατικής κτηνοτροφίας, όπου τα ζώα στοιβάζονται σε συνθήκες ασφυκτικές και γίνεται αλόγιστη χρήση αντιβιοτικών, είναι ορατός ο κίνδυνος ανάπτυξης νέων ιών, που περνούν και στον άνθρωπο. Από μια τέτοια μονάδα ξεπήδησε η γρίπη Α.
Το 1998, σε χοιροτροφείο της Βόρειας Καρολίνας των ΗΠΑ, είχε κάνει την εμφάνισή της μια εξαιρετικά παθογόνος μορφή της γρίπης των χοίρων. Τα επόμενα χρόνια, ο ιός έκανε σταθερά την εμφάνισή του εκεί, κάθε φορά και λίγο πιο ισχυροποιημένος. Ηταν τότε που, σε άρθρο τους στο περιοδικό «Science», μια ομάδα επιστημόνων είχαν εκφράσει φόβους ότι κάποιο από αυτά τα υβρίδια θα μπορούσε να εξελιχθεί σε ανθρώπινη γρίπη. Τα αποτελέσματα -έλεγαν- θα ήταν ολέθρια…
Ουδείς γνωρίζει εάν η σημερινή (σχεδόν) πανδημία της «νέας γρίπης» -μετονομάστηκε έτσι κατόπιν πιέσεων του ισχυρού κτηνοτροφικού λόμπι- έχει τις ρίζες της σε εκείνη την υπόθεση.
Αλλωστε, τα στοιχεία που ανακοίνωσε το Μεξικό σχετικά με τις συνθήκες που επικρατούν στη μονάδα Granjas Carroll (θυγατρικής της αμερικανικής Smithfield, της μεγαλύτερης εταιρείας εκτροφής χοίρων στον κόσμο) στην επαρχία Λα Γκλόρια, από όπου ξεπήδησαν τα πρώτα κρούσματα, το τι δηλαδή συνέβη ώστε να «θεριέψει» ο ιός και να βγει από τα «τείχη» της μονάδας, ήταν εξαιρετικά ελλιπή. Και μάλλον θα παραμείνουν έτσι.
Περιέργως, η «προηγμένη» Ε.Ε., η οποία προσφάτως έχει αλλάξει άρδην το καθεστώς στην παραγωγή κτηνοτροφικών προϊόντων -επιβάλλοντας, μεταξύ άλλων, αυστηρούς περιορισμούς στη χρήση αντιβιοτικών και άλλων σκευασμάτων-, δεν φαίνεται να πιέζει το Μεξικό για εξηγήσεις.
Το ερώτημα πάντως παραμένει. Μπορούν στα σύγχρονα κτηνοτροφεία να «καλλιεργηθούν» επικίνδυνες για τα ζώα και τους ανθρώπους ασθένειες και σε τι βαθμό; Πέρυσι, το ερευνητικό κέντρο Pew (ΗΠΑ) εξέδωσε μια σημαντική έρευνα για τη βιομηχανική κτηνοτροφία.
Όπως υποστήριζαν οι ερευνητές, στις κτηνοτροφικές μονάδες, εκεί όπου τα ζώα στοιβάζονται κυριολεκτικά το ένα δίπλα στο άλλο, σε συνθήκες ασφυκτικές, είναι ορατός ο κίνδυνος ανάπτυξης νέων ιών μέσω μετάλλαξης ή ανασυνδυασμού γονιδίων. Ο λόγος είναι προφανής: σε μεγάλες συγκεντρώσεις ζώων, οι ιοί ανακυκλώνονται αδιάκοπα και εξελίσσονται ραγδαία.
«Η μεγάλη συγκέντρωση παραγωγικών ζώων, θηλαστικών και πτηνών, έχει ως αποτέλεσμα, πολλές φορές, τη μεγιστοποίηση των προβλημάτων υγείας του ζωικού πληθυσμού», εξηγεί ο καθηγητής Κτηνιατρικής στο ΑΠΘ, πρόεδρος του Εθνικού Ιδρύματος Αγροτικής Ερευνας και πρόεδρος της Ελληνικής Κτηνιατρικής Εταιρείας κ. Σπύρος Κυριάκης.
«Έχει όμως και ως αποτέλεσμα, ειδικά σε χώρες υψηλής κτηνιατρικής υποστήριξης, την εφαρμογή προηγμένων πρακτικών κτηνιατρικής βιοασφάλειας που μειώνουν στο ελάχιστο αυτόν τον κίνδυνο». Επί της ουσίας, ο κ. Κυριάκης λέει ότι στην Ε.Ε., όπου έχουν θεσπιστεί κανόνες γύρω από την εκτροφή ζώων, ο κίνδυνος είναι μικρότερος. «Η αναπαραγωγή νέων υποτύπων της γρίπης σε χοίρους παρατηρείται κυρίως σε περιοχές τριτοκοσμικές, όπου υπάρχει απόλυτος συγχρωτισμός ανθρώπων και ζώων».
Υποπτα τα αντιβιοτικά
«Κλειδί» του προβλήματος αποτελεί η αλόγιστη χρήση αντιβιοτικών. Οπως εξηγεί ο καθηγητής στη Σχολή Διαχείρισης Φυσικών Πόρων και Επιχειρήσεων του Πανεπιστημίου Ιωαννίνων κ. Παντελής Ζωιόπουλος, μέχρι πριν από πέντε χρόνια, το μεγαλύτερο μέρος της κατανάλωσης αντιβιοτικών αφορούσε τα αγροτικά ζώα και όχι τον άνθρωπο! «Μάλιστα, ο κύριος όγκος αφορούσε τη χρήση των αντιβιοτικών ως αυξητικών παραγόντων (αναβολικών) για τα ζώα. Ομως, λόγω της αναπτυχθείσας αντίδρασης από μέρους της επιστημονικής κοινότητας, κυρίως μετά την είσοδο της Σουηδίας στην Ε.Ε., η οποία είχε απαγορεύσει τη χρήση τους ως αναβολικών στα ζώα, από το 2005, η χρήση τους ως αναβολικών απαγορεύτηκε στην επικράτεια της Ε.Ε.».
Η αιτία ήταν ότι, λόγω της χρήσης αντιβιοτικών ως προληπτικό και αυξητικό μέτρο, αναπτύσσονταν ανθεκτικά στελέχη των μικροβίων στα ζώα, τα οποία είναι κοινά με εκείνα για τον άνθρωπο. Με άλλα λόγια, η αλόγιστη χρήση των αντιβιοτικών αποδυναμώνει την άμυνα του οργανισμού των ζώων, που, σε συνδυασμό με την αλόγιστη χρήση των εμβολίων, δημιουργεί εύφορο έδαφος για την εγκατάσταση νέων ιώσεων.
Ενώ όμως στην Ευρώπη η χρήση των αντιβιοτικών απαγορεύτηκε -με αποτέλεσμα βέβαια να αυξηθεί το κόστος παραγωγής κατά 5%!-, στον υπόλοιπο κόσμο, αλλά και στις ΗΠΑ, όπως τονίζει ο κ. Κυριάκης, τα σκευάσματα αυτά εξακολουθούν να χρησιμοποιούνται ασύστολα και χωρίς κτηνιατρικό έλεγχο. «Το αποτέλεσμα είναι η κάθετη αύξηση των παθογόνων βακτηρίων, υπεύθυνων για σοβαρότατα ανθρώπινα νοσήματα.
Παράγεται δηλαδή ένα παθογόνο βακτήριο στο στάβλο, το οποίο προκαλεί αρρώστια στον άνθρωπο και είναι ταυτόχρονα ανθεκτικό σε όλα τα αντιβιοτικά!» Εχει βρεθεί μάλιστα ότι το 50% των παθογόνων στελεχών βακτηρίων παράγονται στους χώρους εντατικής κτηνοτροφίας (το υπόλοιπο 50% στα νοσοκομεία).
Ο ρόλος της διατροφής
Σύμφωνα με τον κ. Ζωιόπουλο, η βιολογική κτηνοτροφία θα μπορούσε να αποτελέσει πρόταση επίλυσης του προβλήματος. «Ομως, η αλήθεια είναι ότι η γενίκευσή της δεν είναι εύκολη υπόθεση και αφορά ένα περιορισμένο αγοραστικό κοινό. Και αυτό γιατί η βιολογική εκτροφή απαιτεί περισσότερο χρόνο, μεγαλύτερους χώρους, οι βιολογικές ζωοτροφές είναι δυσεύρετες… και στοιχίζουν περισσότερο», τονίζει. «Ισως η εφαρμογή της ολοκληρωμένης γεωργίας στη φυτική παραγωγή, με τη μερική χρήση χημικών, να αποτελεί εναλλακτική και πιο βιώσιμη λύση.
Η εντατική κτηνοτροφία καλείται να δώσει λύση στο πρόβλημα εφοδιασμού του ανθρώπου με πρωτεΐνη. Μπορεί η ζωική πρωτεΐνη να είναι η καλύτερη, αλλά πρωτεΐνη έχουν και τα φυτά. Ορισμένα μάλιστα, όπως τα ψυχανθή (όσπρια), έχουν αυξημένο περιεχόμενο σε πρωτεΐνη.
Δυστυχώς, εδώ παρεμβάλλονται οι διατροφικές συνήθειες ενός λαού και μπερδεύουν τα πράγματα. Οι Ελληνες, π.χ., προτιμούν αρνί και μοσχάρι γάλακτος, τυρί φέτα, γιαούρτι πρόβειο.
Γενικώς, το θέμα της μορφής με την οποία πρέπει να ασκείται η κτηνοτροφία του μέλλοντος πρέπει να αποτελεί επί της αρχής έναν νέο τρόπο σκέψης. Δηλαδή, να αποτελέσει μια φιλοσοφία στάσης απέναντι στο μείζον θέμα της κάλυψης των αναγκών του ανθρώπου σε υψηλής ποιότητας πρωτεΐνη»
Translation - English ARE INTENSIVE LIVESTOCK REARING METHODS TO BLAME FOR THE NEW FLU?
There is a danger of new zoonotic viruses developing in intensive livestock farms where animals are packed in asphyxiating conditions and antibiotics are used excessively. Flu type A originated from a farm of this kind.
In 1998, on a pig farm in North Carolina in the USA, an extremely pathogenic form of swine flu emerged. In the following years, the virus re-surfaced ever increasingly more virulently. It was then, that a team of scientists in their article in the magazine “Science” had expressed fears that one of these hybrid viruses could develop into human flu. The results, they said, would be disastrous…
No-one knows if the present (near) pandemic of “new flu” – which was renamed in this way after pressure from the strong livestock sector lobby – has its roots in this matter.
Furthermore, the information published by Mexico concerning the conditions at the Granjas Carrroll farm (a subsidiary of Smithfield of America, the largest company producing pigs in the world) in the province of La Gloria, where the first outbreaks emerged, regarding what caused the virus to “grow so intense” and to “come out of the walls” of the farm, were exceptionally incomplete. And it will probably remain so.
Curiously, the “existing” European Union, which has recently radically changed the policies regarding the production of livestock products – imposing, amongst other things, strict restrictions for the use of antibiotics and other medications, doesn’t appear to be pressuring Mexico for explanations.
In any case, the question remains. Is it possible for modern livestock farms to “cultivate” dangerous zoonotic diseases and to what degree? Last year, the Pew research centre (USA) published a significant research paper on industrial livestock farming.
According to the opinions of researchers on livestock farms, where animals are literally packed one next to the other under asphyxiating conditions, there is a danger of new viruses developing by mutation or the recombination of genes. The reason for this is obvious: in large concentrations of animals, viruses recirculate ceaselessly and evolve very quickly.
Spyros Kyriakis, Professor of Veterinary Studies at the Aristotelian University of Salonica and Chairman of the Hellenic Veterinary Society, explains, “The tight concentration of farm animals, mammals and birds, frequently results in the health problems of the animal population increasing to the highest levels”.
“This results in existing measures of veterinary biosecurity being applied, especially in countries with high levels of veterinary support, which reduce this danger to the minimum.” On the subject, Mr. Kyriakis says that in the European Union, where regulations have been enacted for the rearing of livestock, there is less danger. “The breeding of new sub-categories of flu in pigs occurs mainly in third world areas, where animals and people live in close proximity to one another”.
Antibiotics are suspiciously related to the problem
The “key” to the problem is the excessive use of antibiotics. As Mr. Pantelis Zoiopoulos, Professor of the School of Management of Natural Resources and Businesses of the University of Ioannina, explains, the largest proportion of antibiotic consumption has been by animals and not humans! Antibiotics have mainly been used as growth promoters (anabolics) for livestock. However, due to the reaction which emanated from part of the scientific community, mainly after the entry of Sweden into the European Union, which had prohibited the use of antibiotics as anabolics for livestock from 2005, their use as anabolics was prohibited in the territory of the EU.
The reason was because the use of antibiotics as a preventative and growth promoting agent caused resistant strains of the microbes to be developed in animals, which were common to those affecting humans. In other words, the excessive use of antibiotics weakens the animal’s defence mechanism, which, together with the excessive use of vaccines, creates fertile media for the growth of new viruses.
Despite the fact that the use of antibiotics was prohibited in Europe – which resulted, of course, in increasing rearing costs by 5%! -, in the rest of the world, including the USA, as Mr Kyriakis stresses, these medications continue to be used flagrantly without any veterinary control. “The result is the direct increase of pathogenic bacteria, which cause very serious human illnesses.
That is to say that a pathogenic bacterium is produced on a livestock farm, which causes a human illness and is simultaneously resistant to all antibiotics!” It has been found that 50% of pathogenic strains of bacteria are produced in intensive livestock farms (the remaining 50% in hospitals).
The role of feed
According to Mr Zoiopoulos, organic farming could be a way of solving the problem. “However, the truth is that it will not be adopted easily and that it only applies to a restricted buying public. And this is because organic farming requires more time and space; organic livestock feed is harder to find….and is more expensive”, he stresses, “Perhaps, the application of integrated agricultural plant production, with partial use of chemicals, is a viable alternative solution.
Intensive livestock farming is being called upon to provide a solution to the problem of providing humans with protein. Animal protein may be better, but plants have protein, too. Some, and noticeably the legumes (pulses), have higher protein content.
Unfortunately, this is where the eating habits of a nation interfere with and complicate matters. The Greeks, for example, prefer lamb and veal, feta cheese and sheep’s milk yoghurt.
Generally, the manner in which the livestock farming of the future is carried out should become a new way of thought from the outset. That is to say that it should become a study of the general and fundamental problems of meeting the high quality protein needs of humans. “

I am British by birth and descent and have lived in Greece for over 55 years.
I started learning Greek when I first went to Greece in 1960, at the age of 15, after having learned some Czech and Japanese as a child and French and German, both at home and at school.
I started translating from Greek into English in 1972, after having learned and practised Greek gradually for five years and intensively between 1966 and 1971, while I was living and working in Greece and touring the entire country regularly in the course of my job.
Between 1974 and 1978, I had an office in Lamia, in central mainland Greece, and regularly translated for Greek businessmen and farmers and often accompanied them on journeys to England and northern Europe to interpret for them on their business trips or to help them locate and select calves, dairy cattle and breeding stock.
Apart from being a translator, I was the managing shareholder of a Greek company specialising in the importation and marketing of veterinary health and industrial hygiene products between 1981 and 2012.
In the many years that I represented large UK chemical companies in Greece, I accumulated a great deal of experience in translating chemical and pharmaceutical product licensing dossiers, marketing authorisations, health and safety data sheets, technical manuals, legislation, contracts, brochure and label texts and a very wide variety of other material to and from Greek and English, and the constant practice I had in translating such texts is proving invaluable to me now.
By having represented UK manufacturers, I was able to maintain the quality and fluency of my English due to having had to correspond and communicate with the export personnel of the companies on almost a daily basis.
