Este plato aparece en un menú de un restaurante.

Croca es carne de ternera de la parte de la cadera (rump) y gallo de corral hace referencia a un gallo criado de manera tradicional y al aire libre, lo que le da a la carne una textura particular. Es un producto muy apreciado por su calidad.

Podría traducirse por "farm cockerel"? "Rump steak and farm cockerel lasagna??? ¿Qué otras opciones hay?

It would be extremely rare to cook rooster. Capon is a male chicken raised to be served in gourmet recipes.

neutral Rebecca Reddin : 'Veal' might put off quite a few guests, which is a large risk when "ternera" is frequently used in Spain to indicate beef in general, not necessarily veal.

Yes - good point and it would be important to know whether this is beef or veal. We certainly separate them in English, and for American tourists, the distinction should be clear.

neutral Yvonne Gallagher : so it's "veal and free-range chicken lasagne" now we know (finally) that it's not 2 dishes. (still don't think we'd say capon here in English)? "Capon" perhaps in a dish on its own but not when mixed with other meat in a so-called "lasagne"

It's true that capon is only used in gourmet/haute cuisine dishes, so it really depends on what kind of restaurant this is, and who the audience is.

disagree Yvonne Gallagher : croca is crockpot?!/ Wrong again! Santa Croce is a church and neighborhood in Florence Italy as your latest link shows. This is a restaurant in Spain and it's a Spanish word "crocA"! Why guess meanings of words and mix up languages?

I agree with Rebecca that veal may be off-putting for customers so, though "ternura" often refers to veal, it could also mean beef here. Especially since lasagna is usually made with beef.

But what cut is "croca? Is it really rump? I doubt it. Good mincemenat to be used in lasagna would be from minced round steak . That's what I use anyway.

Still waiting for further input from Asker. Is this 2 dishes or one? Or 2 dishes on the one plate? It would seem that lasagna made with a mixture of chicken and beef would be highly unusual and not very appetising in my view.

Anyway, this may help actually choose the correct cut of meat in English

as for the chicken...well "free range" is obviously a selling point but though coq au vin is a well known dish, we'd normally just say "chicken" in English rahter than specify its gender.

It is actually lasagne with both beef and poultry. The reply to the review linked to the photo actually mentions "nuestras nuevas creaciones culinarias", which I guess is as good a description as any for a beef-and-poultry lasagne.
