Este año la Feria Internacional de Turismo (FITUR) está de conmemoración al organizar su trigésima edición. A más de la mitad de ellas ha asistido Gran Hotel Turismo, ya que desde su lanzamiento en 1992 ha considerado indispensable acudir a esta gran cita mundial. Y este año no iba a ser menos. Para celebrarlo también nosotros, hemos decidido publicar una nueva sección denominada “Destino Turístico”, en la que ciudades, comunidades autónomas, regiones o países presentan su oferta al lector. FITUR se encuentra entre las tres primeras ferias dirigidas al sector en el circuito internacional y en ella se muestran las propuestas más atractivas de las empresas turísticas, las últimas tendencias del mercado, así como los programas de los 170 países o regiones que participan en el salón. Una de las claves que ha marcado la evolución del certamen madrileño en estas tres décadas ha sido la sensibilidad que ha demostrado por reconocer las tendencias de negocio y reflejarlas en su oferta, que está cubierta por todos los sectores que conforman el panorama turístico, como los hoteles. A los de la más elevada categoría le dedicamos un reportaje, como suele ser habitual en el primer número del año. ¿En qué se distingue un cinco estrellas de uno de otra categoría? La respuesta puede ser muy larga, pero, como bien dice uno de los entrevistados en este artículo, se podría resumir con una frase categórica: “Es como diferenciar el trato en unos grandes almacenes del que se recibe en una exclusiva boutique. A pesar de comparar el mismo producto, la experiencia es muy distinta”. También incluimos una entrevista con Xavier Pellicer, todo un dos estrellas Michelin que basa su cocina en la calidad del producto. This year marks the 30th anniversary of FITUR, the International Tourism Trade Fair. Magazine Gran Hotel Turismo has attended more than half of these annual events since its launch in 1992 made it indispensible to go to this huge worldwide event. To celebrate the magazine’s success, we have decided to publish a new section titled “Tourist Destinations,” in which cities, autonomous communities, regions, and countries present their offers to the public. FITUR is one of the top three fairs dedicated to the international tourism sector, and at this event, tourist companies show their most attractive products, the latest market trends, and the programs offered by the 170 participating counties and regions. One of the key aspects that have marked the evolution of this Madrid fair for the past three decades is its ability to recognize business trends and demonstrate them in its showcase covered by every industry of the tourism sector, including hotels. As always in our first issue of the year, we report on the highest-rated hotels. How do we distinguish a five-star hotel from another of a different category? The answer may seem to be quite long, but as one of the interviewees has said so elegantly, “It’s like differentiating a department store’s services to those given by an exclusive boutique. Even though you’re comparing the same product, the experience is very different.” In this issue, we have also included an interview with Xavier Pellicer, an award-winning chef who, given two Michelin stars, bases his cooking on the highest-quality products.
