I see nothing wrong with the use of the wprd "mosaic", however it may seem too literal.

agree Evans (X) : I like the use of the expression "riot of colour" here, it is very natural English and very evocative.

thanks Cilla for agree and compliment!
agree Charles Davis : For a Mexican fiesta, I think "riot" is just right. I also agree that changing the order of the nouns gives it a better rhythm.

Composition of happiness, color and movement

Another meaning of "mosaic" is "composition."

I referenced the link on dictionary.com.

Thanks

Or, since it's describing a celebration, you could also say "A mixture of happiness, color, and movement."

A fusion of joy, colour and movement

Just another option. I know fusion is not exactly the same as mosaic but in this context I think it is adequate.

Medley (or Fusion) of joyfulness, color, and movement

I prefer medley or fusion over mosaic. For alegria, you could use joyfulness, delight, cheer, festivity, and on and on... Good luck!

Tesselation of joy, color (colour) and movement

Tesselation - formed of small, flat pieces of stone of various colours (as used in mosaic).
I also like the 'elation' part of the word, it brings festive to the mind.
Also note that you should use "color" or "colour" depending of the target audition, US or UK English
