I find references for 'mosto' as non-fermented grape juice. Here we are talking sugarcane. Any help will be appreciated!

El mosto es el material fermentable previamente preparado. En la primera fase de producción de alcohol, el mosto será el propio jugo evaporado. Después del inicio de la producción de sugar, el mosto será preparado mediante una mezcla de la miel proveniente del cocimiento (miel B), con el jugo mezclado destinado a fermentación y con agua para obtener una mezcla de brix adecuado.

El mosto o jugo caliente que viene de la evaporación, es enfriado a 30 grados centígrados mediante intercambiadores de placa. En esta etapa se regulan las condiciones de trabajo para una buena fermentación, como, caudal, contenido de sugares y temperatura. El proceso es monitoreado automáticamente por densímetros, medidores de caudal, controladores de brix, medidores de temperatura.

Lydia, "must" is the expressed juice of fruit (b)and especially grapes(/b) before and during fermentation. You can use the term with other fruits as well.

"Wort" is more appropriate for crushed herbs.

In the case of sugar cane, I would use "must," since the final product will be rum.

Explanation:
A paper entitled "EVALUACIÓN DE ALTERNATIVAS PARA EL APROVECHAMIENTO DEL MOSTO ..." comes with an abstract in Spanish followed by an English translation of the abstract. This contains the phrase
"... En este caso se estudian alternativas para el aprovechamiento del mosto en diversas vías, y particularmente,..."
which was translated as
"They have been studied alternatives in order to use those molasses in a profitable way, particularly..."
Whereas the English of the authors does not seem to be too good, I think you can safely infer that mosto = molasses.

In the book 'Sugar Cane Cultivation and Processing' (http://www.ilo.org/safework_bookshelf/english?content&nd=857... is says:

The mixture is clarified by heating and […]. Once clarified, the juice is concentrated by vacuum evaporation […]. The concentrated juice, or molasses, is 45% water.
We are talking here about concentrated juice, no?
