Boquiabertos Is a bit more than the mouth wide open, although it's what it literally means. It means the person is totally out of action, paralyzed.

"leave" is fine here as a verb but will depend on the expression you choose

'Leave your guests stunned'. I think this works fine, but there could also be other options such as 'amazed' or 'open-mouthed'

Or you could also use amazed!!
