I have found two definitions of "cochado" in Columbian sources, one referring to coal in mining and the other to sand in construction:

"COCHADO: Una carga de carbón en coches (carros) que se emplean para transportarlo del interior de la mina"

"8.6.2.4 Cochado
Cantidad de mezcla contenido en el vehículo manual de transporte dentro de la obra, denominado coche. Se aplica también al proceso de transporte del concreto o del mortero en coches"

The second of these implies that a "coche" here is a barrow or cart, so a "cochado" is a barrowload or cartload.

"Palada" is very widely used and means the quantity of material that fits in a "pala" or shovel; so it's a shovelful, or just a shovel, of material.

I think these meanings fit the quantities indicated; 24-30 shovels per barrowload and 8 barrowloads per cubic metre.

As a very rough guide, a cubic yard is around 150 shovels, according to this page:

Since a cubic metre is 1.3 cubic yards, a cubic metre will be around 200 shovels. 8 barrowloads at 24-30 shovels each makes 192-240 shovels. So the figures are of the right order.
