'grow before one's very eyes' OR simply, 'grow very rapidly'

"Like a house in a fire" doesn't work here.
We do refer to things happening 'before one's very eyes' , which could work here if you want to use something idiomatic.
Though just using something like 'grow very rapidly' would certainly convey the correct meaning.
