Buenos día, luego de investigar un poco encontré que PC significa palabra y color, pero no sé si prima está relacionado con primario (en relación con el color).

'prima' has nothing to do with primary colours.

PC' (read as PC prime) , or PC" (PC double prime) in some sources, refers to a value that is derived from the values of P and C.

The 2nd line of the ST:

relates directly to the equation quoted (and corrected) above, and can be translated thus:
Final score: PC - PC' = xx points
where 'final score' is commonly known as the 'interference'.

The first webref above states:
[interference] es el indicador que informa de cuánto el individuo se deja interferir por el efecto de tipo Stroop (1935). Si la puntuación es positiva, el individuo ha inhibido adecuadamente la respuesta automática y, si es negativa, presumiblemente ha inhibido peor de lo que hubiera sido esperable (siempre considerando que la población general oscila aproximadamente entre el -10 y el 10)

It's a standard mathematical notation denoting values that are derived (or transformed) from other values. And I did extract the most relevant bit from the Spanish webref (i.e., the formula).
agree Althea Draper : Section 2.4.6 of https://www.ncbi.nlm.nih.gov/pmc/articles/PMC1991277/ "“CW prime” score (W×C/W+C = CW′). The sum of third condition is then subtracted by the CW′ score (CW-CW′ = interference)." Shouldn't PC translate as CW?

Yes - it's CW in English (colo(u)r/word), but that is not the subject of this question.
