We don't actually introduce the white mould in the cheese (geitenkaas). So as you can imagine, in caves in France or Italy, it's sort of inherent in the rocks. So we've tried to encourage that inside here. We keep the temperature at about 12 degrees.

Hallo Sandra,

Dat wordt volgens mij bedoeld. Ze voegen geen schimmel toe aan de kaas, hij is "als het ware van nature aanwezig in de rosten".
