determine/establish to what degree the caretakers are overworked

I would say

"caregivers" better than "caretakers"

otherwise sounds like "porteros"

but in the US "caretakers" might work

overload... undergo (see below)

I would translate "determinar el nivel de sobrecarga que se presenta en los cuidadores de enfermos" as
"to determine the level(s) of overload that caretakers undergo".
Peer comment(s):

neutral Neil Ashby : not sure about "undergo", it means to be subjected to something (undergo a medical exam) but the careworkers are not 'subjected to overworking', they are overworking, it's an action they perfrom (probably very be grudgingly).

(the degree of) overload among

It's not extremely clear to me from the little context, but I understand they're talking about the amount that a care provider's workload exceeds a certain amount - i.e. their 'overload'.

The 'que se presenta' can't be translated directly; it's too awkward. Some other options include "present among" and "found among".

apparent excess workload

or just "excess workload"

Excess workload can result in human performance issues such as slower task performance and errors such as slips, lapses or mistakes.

overwork incurred

...establish the level/degree of overwork incurred by care workers...
Peer comment(s):

neutral Neil Ashby : I think this is just a re-arrangement of Dave Holloway's but with the emphasis placed on "overwork" rather than the "careworkers" being overworked.

caregiver burden

to determine the level of caregiver burden

There are scales used to measure this, e.g. the Caregiver Reaction Scale to measure the level of caregiver burden, etc
