As of 2022-04-25, version 11.0.5, CafeTran Espresso uses these colours to mark added and deleted text in fuzzy matches:

You can set the colours via View » Colors » Added
text and D̶e̶l̶e̶t̶e̶d̶ ̶t̶e̶x̶t̶.
